How is freeze-dried candy made?

Elves, clearly magical elves. At least that is what we are guessing. Either that, or a series of events involving freeze drying, a vacuum sealed chamber that creates a low-pressure environment, the removal of all moisture via a gradual temperature raise that causes the ice in the candy to turn from a solid into a gas state without becoming a liquid. Followed by a final drying process that removes and remaining moisture… don’t quote us on this, but we are fairly certain its magical elves.
